Barb's HTB focaccia bread
This is the easiest focaccia bread you will ever make - no kneading, just 2 rises, and no special pans! The veggie topping is optional but fun, especially if kids are helping. It is best when eaten fresh.
Barb's HTB Focaccia Bread
Makes 1 loaf
Cook time 25 minutes
INGREDIENTS
1 packet active dry yeast
1 ½ cups warm water (120 degrees)
1 tsp honey
1 ¾ cup organic gluten-free flour
½ cup Himalayan Tartary Buckwheat Flour
½ cup organic corn starch
2 Tbsp baking powder
1 tsp salt + more for sprinkling
Pepper to taste
¼ cup extra virgin olive oil + more
METHOD
Dissolve the yeast in the warm water and honey, allowing to sit for about 5 -10 minutes until bubbly.
In a large bowl, combine the flours, corn starch, baking powder, and 1 tsp salt. Pour the yeast mixture over the dry ingredients, adding the olive oil and stir to combine. The dough will be quite soft, like a batter instead of dough. Cover the bowl with a towel and place in a warm part of the room with no drafts. Allow to sit about an hour or until it doubles in size.
Line a cookie sheet with parchment paper. Brush with some olive oil. Sprinkle very lightly with some salt and pepper. Scrape the risen dough into the pan and with wet hands, press the dough to the edges of the pan. Brush with more olive oil and cover with a towel. Allow to rise gain for about 30 minutes. Preheat oven to 450 degrees F. When the has risen enough, bake for 20-25 minutes in preheated oven until golden.
Optional: Decorate the focaccia with veggies of your choice, such as asparagus, bell peppers, broccoli, zucchini, mushrooms, black olives, etc. Brush veggies lightly with olive oil and sprinkle with a little salt and pepper. This can be a fun project for kids! They can make flowers or faces!
