Hayley's HTB Sprout Powder Pesto

Say hello to your new favorite pesto recipe! This vibrant, nutrient-packed twist combines fresh herbs, rich olive oil, and the unique addition of Himalayan Tartary Buckwheat Sprout Powder for a healthy boost you can taste.

INGREDIENTS

For the HTB Sprout Powder “Parmesan” Topping:

1/4 cup HTB Sprout Powder

1/2 tsp garlic powder

1/2 tsp onion powder

3 tbsp nutritional yeast

1/4 tsp salt

1/2 cup macadamia nuts

For the Pesto:

½ cup toasted pine nuts

2 tablespoons fresh lemon juice

1 small garlic clove

1/2 teaspoon sea salt

freshly ground black pepper

2 cups basil leaves

¼ cup extra-virgin olive oil, plus more for a smoother pesto

1/4 cup of vegan parmesan

METHOD

For the "parmesan" topping, blend all ingredients in a blender until a fine powder forms, making sure to scrape down the sides of the blending cup as you go. Set aside.

To make the Pesto: Blend together all pesto ingredients and . cup of the vegan parmesan. Use the pesto on top of pasta, pizza, toast, mixed into dips or soups. Sprinkle extra HTB sprout powder on top!
