Soba noodle salad with HTB peanut dressing
This soba noodle salad is a healthy, on-the-go recipe with a secret ingredient. The luscious peanut dressing is powered by our Himalayan Tartary Buckwheat Sprout Powder, which is 100% organic and grown in the USA.

INGREDIENTS
For HTB peanut dressing:
½ cup peanut butter, creamy
1 tsp Himalayan Tartary Buckwheat Sprout Powder
1 Tbsp water, more if needed
3 Tbsp tamari or coconut aminos
½ Tsp toasted sesame oil (optional)
1 Tbsp maple syrup, plus more to taste
1 lime, juiced
2 Tbsp sweet chili sauce, sriracha or your favorite hot sauce
1 tsp salt
For soba noodle salad:
2 bundles of Soba noodles
2 red bell peppers, cut into thin strips
2 cups red cabbage, thinly sliced
¼ cup fresh cilantro or basil
Toppings: chopped peanuts, fresh cilantro
METHOD
Add the peanut dressing ingredients to a high-speed blender and blend until smooth. Add more water if you prefer a looser consistency. Adjust the seasonings as desired.
Cook the soba noodles according to the package directions then drain, rinse and set aside in a large bowl.
To the same bowl, add the red bell pepper, red cabbage, fresh cilantro and drizzle with about ¼ - ½ cup of the peanut dressing. Toss all of the salad ingredients together to coat evenly with the dressing.
Serve in separate bowls and garnish with chopped peanuts, fresh cilantro and an extra drizzle of peanut dressing.
NOTES
You can add a protein of your choice for an even more substantial meal.
