HTB Superseed Cookie Recipe

With thoughtful ingredients, even a cookie can become a nourishing treat. These HTB Superseed Cookies feature Himalayan Tartary Buckwheat flour—an ancient plant naturally rich in polyphenols and fiber. The result is a lightly sweet, warmly spiced cookie topped with crunchy superseeds that add both texture and extra plant-powered nutrition.

HTB Superseed Cookies 

Yield: 12 cookies

Bake: 15–20 minutes at 450°F


INGREDIENTS

  • 2 eggs
  • 1 cup sugar
  • ½ cup melted butter
  • 3 cups HTB flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ¼ tsp ground clove
  • ½ tsp ground cinnamon
  • 1 tbsp vanilla extract

METHOD

Mix ingredients to form a dough. Chill the dough — it will be very sticky when fresh but easier to work with when chilled.
Form into a ball, coat with superseed "sprinkles" if desired (see below), press the cookie gently but not too flat, then bake.
