INGREDIENTS
Makes 1 mason jar | Chill after preparing | Use within 5 days
- 1 small cucumber
- 1/2 cup apple cider vinegar (look for ACV with Mother)
- 1/4 cup extra virgin olive oil
- 1/4 tsp Celtic sea salt
- Pepper to taste
- 2 small limes (juiced) add some zest too if you like a more tangy dressing
- 2 small avocados
- 1 tbsp minced garlic
- 1/2 cup red onion, chopped
- 2 tsp of HTB Sprout Powder
- Fresh or dried herbs
- (mix it up - you can use basil, oregano, dill, cilantro, or parsley)
METHOD
Prep the base
Finely chop cucumber, red onion, garlic, herbs, and avocado.
Build the blend
Add all chopped ingredients to a food processor.
Pour in apple cider vinegar, lime juice, and olive oil.
Add salt and pepper.
Blend until smooth
Pulse, then blend until creamy and fully combined.
Scrape down the sides as needed.
Taste and adjust
Taste the dressing.
Add more lime, salt, pepper, or herbs depending on preference then pulse a few more times to fully incorporate.
The dressing will be naturally thick, you can add a little bit of water if you prefer to thin it out.
Chill and serve
Transfer to a mason jar and refrigerate.
Let flavors come together before serving.
