Barb's HTB Superfood breakfast bars

This bar makes a great breakfast on the run. You can use different nuts and seeds of your choice and try different sweeteners too. They will freeze well in individual baggies so you grab quickly on the go! Be sure to have the liquid ingredients at room temperature.

Barb's Superfood breakfast bars

Makes 24 bars

Cook time 40 minutes

INGREDIENTS

For Bars:

2 cups rolled oats

1/3 cup oat flour

2/3 cup HTB Rejuvenate Superfood

1 Tbsp chia seeds

2 Tbsp hemp seeds

2 Tbsp sesame seeds

1 tsp baking powder

½ tsp salt

1 cup raisins or dried cranberries (sweetened with apple juice)

1 cup sunflower seeds or cashews

1 cup unsweetened coconut flakes

1 tsp each: cinnamon, nutmeg, and ginger

¼ cup coconut sugar

2 eggs, beaten

1 ½ cups unsweetened nondairy milk

1/3 cup pure maple syrup or date syrup

¼ cup coconut oil, melted

¾ cup unsweetened apple sauce or apple butter

For Topping:

1 Tbsp coconut sugar

1 Tbsp cinnamon

Barb's Superfood Breakfast Bars

METHOD

Preheat oven to 350 F, and grease a 13x9 pan with coconut oil. set aside.

Place all dry ingredients in a medium bowl (oats to coconut sugar), and combine well with a fork. Mix your choice of milk, maple syrup, melted coconut oil, and applesauce in a large bowl.

Add the dry ingredients to the wet and mix gently with a spatula. Gently pour the batter into prepared pan, smoothing the top with spatula. Combine the topping sugar and cinnamon in a small bowl and sprinkle evenly over the batter.

Bake for ~30-40 minutes til golden brown. A toothpick inserted should come out clean. Cool for 20 minutes and then cut into 24 bars. Wrap individually and use for a quick breakfast on the run. 2 bars will serve as breakfast, while 1 bar will be good for a mid morning snack.
