Gillian’s Pear Crumble
INGREDIENTS
For the crumble
⅔ cup old fashioned rolled oats
¼ cup Himalayan Tartary Buckwheat Super Nutrition Flour
¼ cup almond flour
½ cup brown sugar
½ tsp ground cinnamon
½ tsp baking powder
½ stick salted butter, cubed
For the filling
4-6 small pears
2 Tbsp butter, melted
2 Tbsp Himalayan Tartary Buckwheat Super Nutrition Flour
1 Tbsp lemon juice
3 Tbsp milk (or milk alternative, like cashew milk)
½ tsp vanilla extract
¼ cup light brown sugar
½ tsp ground cinnamon
¼ tsp ground nutmeg
¼ tsp salt
METHOD
Preheat oven to 375° F.
For the crumble, combine all ingredients in a medium bowl with a fork. Refrigerate while making the filling.
For the filling, peel and slice pears all at once, then cube.
In a small bowl, add melted butter and flour. Then add lemon juice, milk, and vanilla, and mix well. Add in brown sugar, cinnamon, nutmeg, and salt.
Pour batter over pears and toss to coat.
Pour into 8×8 baking dish and spread into an even layer. Evenly sprinkle the crumble on top.
Bake for 30-35 minutes or until golden brown. Let stand for 10 minutes. This recipe can be served as is, or try adding a sprinkle of your favorite chopped nuts, or a dollop of plain yogurt with a honey or maple drizzle.
